Hug me, I'm a vegetarian!

Just wanted to let ya'll know that tomorrow is International Hug A Vegetarian Day! That's every day for me because every morning I get up and give myself a big old bear hug. (Hey, sometimes it's all a girl can get! Don't judge.) I've been an on and off veggie since I was a kid and always had a love/hate relationship with meat. It's delicious, but the act of eating it has always grossed me WAY out. When I was eating flesh, if I saw a bone - I'd instantly dry heave. No joke. The funny thing is is that I'm not even an animal lover! I'm deathly afraid of dogs, cats are as creepy as they come, and farm animals - gross. Ugly and smelly. Barf. I stopped officially eating all meat a few years ago and haven't missed it. (Well, except for fish & chips from Claddagh and whiting from Mary's Seafood. Oh, and red snapper from Thai Taste. YUM.... Doh!) I know people argue that fish is not meat, but me - I feel really badly eating anything that had parents. Don't get wrong though - I'm not one of those annoying vegan people who eat sawdust covered figs for dinner. No way - you don't get my kind of junk-in-the-trunk from eating seeds. One day, I'm going to open a vegetarian restaurant for normal people (you know, who like food.) In the meantime, here's one of my famous vegetarian recipes in honor of the day. And below is some food for thought....

Tish's Totally Tasty 'Fishy' Tacos (say that 3 times fast.)
Serves 4
-4 Vegetarian Cod Fish Fillets,
found here. 
(Or 1 pound tempeh or firm tofu cubes) I hate tofu though - BARF - but to each their own.
(OR if you insist on eating a defenseless, ugly and smelly little creature, go ahead and get 4 small cod fish fillets. You dirty flesh eater!)
-2 cups seasoned flour (If you're too lazy to make your own, 
click me.)  
-1 cup milk
-1 large
brown egg (I guess it doesn't have to be brown, but that's what I use so just go with it.)
-2 tablespoons
Tapatio-brand hot sauce
-8 Ole-brand white corn tortillas
-2 cups shredded red cabbage
-4 cups peanut or vegetable oil.
-1/2 cup
Cacique-brand Crema Mexicana (I suppose you could use regular sour cream, but this is just used for a drizzle, so crema is better, and more delicioso!.)
-1/2 cup Cacique-brand Cotija cheese for sprinkling
-Lime wedges

For Pineapple salsa
(This can be made the day ahead and stored. Just mix it all together and voila! Instant yuminess.)
-2 cups diced canned or fresh pineapple (with juice)
-1 small to medium jalapeno, finely diced (You can remove the seeds if you're a wimp.)
-1/4 cup finely diced sweet red pepper
-1/2 cup fresh chopped cilantro
-1/3 cup finely diced red onion
-Juice of one lime
-2 tablespoons extra virgin olive oil
-
Goya-brand Adobo w/cumin seasoning and fresh cracked pepper to taste

-Whisk milk, egg, and hot sauce together until completely blended. (Have seasoned flour bowl ready)
-Slice de-thawed cod fillets into bite sized pieces
-Place cod pieces in egg/milk mixture and coat evenly
-Add oil to large frying pan on med high
-One at a time, add cod to seasoned flour, thoroughly coating each
-Carefully place cod into oil and fry until golden brown (For veggie fish, should be about 6-7 minutes - not long at all)
-While fish is frying, heat tortillas. (I'm a big fan of the stove method. I just lay them on a med-low stove eye until they're pliable. Maybe 15 seconds per side.)
-Remove fish from oil and lay on kitchen towel or paper towels to get rid of some of that oil!
-Assemble tacos with a few fish pieces, handful of shredded cabbage, pineapple salsa, and a tiny bit of crema and cheese. Garnish with lime wedges, and go to the mailbox to get your Thank you card from your tongue.

I had fish tacos for the first time this summer and they were good but they were grlled, not fried. yours sound better though. And thanks for putting the links thru out to find the products.
